Home Stay with Families in Guangxi or Hunan

About 2 years ago I travelled to the Karakul Lake near Kashgar (Xinjiang) and stayed overnight in a tiny house that belonged to a Kyrgyz family. If I remember correctly, we ended up paying like 30RMB per night including food. The father of the family simply picked us with a up with his bike at a bus stop near the lake.

I’m going on another trip soon around Guangxi and Hunan, with my family this time. My mother really wants to experience something similar to what I did before. Is there any chance we can stay overnight with some Chinese family along the way, somewhere at the countryside or in a small village? If so, how or where?

To be more specific, here are some checkpoints I have in my head:
Yangshou
Dazhai/Tiantouzhai/Zhongliu/Pingan
Guilin
Zhangjijajie National Forest Park
Changsha

I have no idea. I had never heard of that lake before. The pictures look pretty cool. Probably worth checking out.
